Braised Pork Belly in Dark Soy

Braised pork belly in dark soy sauce, also known as "Hong Shao Rou" (红烧肉), is a classic Chinese dish featuring tender, flavorful pork belly braised in a rich, savory, and slightly sweet sauce. Check out the recipe below:

Ingredients:

  • 400 grams pork belly, cut into 4 inches wide

  • 1 thumb sized ginger, peeled and sliced

  • 5 garlic cloves

  • 2 star anise

  • 2 cinnamon sticks

  • 1 tbs five spice powder

  • 3 tbs dark soy sauce

  • 1 tbs light soy sauce

  • 300ml water

  • 4 hard boiled eggs

  • 1 tsp pepper

Pork Belly Marinate:

  • 2 tbs oyster sauce

  • 2 tsp light soy sauce

  • 1 tbs shaoxing wine

  • 2 tsp sesame oil

Instructions:

  1. Marinate the pork with oyster sauce, light soy sauce, shaoxing wine and sesame oil overnight

  2. In a heated wok or cast-iron, stiry-fry ginger slices until fragrant and add in garlic

  3. Add in marinated pork and stiry fry until semi cooked

  4. Pour in water, add in five spice powder and add in the hard boiled eggs

  5. Add in light soy sauce and dark soy sauce. Bring it to a boil for 20 minutes and then turn the heat low and let it simmer for 2 hours.

  6. Serve hot over jasmine rice
